Zucchini noodles with shrimps and goat cheese is the ideal light dinner for summer. Easy and simple to make, yet very delicious!
Some say zucchini, some say courgette! Either way, zucchini noodles, also known as “zoodles” are a great alternative to pasta and they taste great. It is also a healthier version of pasta if you are trying to cut back on carbs. The pasta is replaced with fresh spiralized zucchini and be eaten raw or fried.
There are different ways to make zucchini noodles. You could use a julienne peeler, a mandoline or a spiralizer. The most common one these days is a spiralizer. I personally use a hand spiralizer and love it. It is small and it stores away easily. Double win! There are different spiralizers for every budget. However, be sure to get one with sharp blades and has a sturdy grip.
How to spiralize zucchini noodles?
- Rinse the zucchinis and cut off the edges.
- Insert it into the spiralizer.
- Press and turn with the same force. This will ensure that you get long, even noodles.
- Put the noodles in a colander. Add some salt over it and let it sit for a while to drain excess water.
- Remove it from colander and set aside on paper towel until ready to use.
Tips:
Zucchinis hold a lot of water. When using it in warm dishes, it is best to fry them first and for no longer than 2 – 3 minutes. Keep them aside and add them to the dish last. Avoid cooking it in sauces as they will get soggy. Zoodles can be eaten raw in cold salads or cooked for warm salads or substitute pasta.

An easy zucchini noodle recipe that is ready to serve in no time! 1. Heat 2 tablespoons of butter and fry zucchini's for about 3 minutes. Remove and drain in a colander. 2. Add 2 tablespoons of butter to the pan. Fry green masala paste for 1 minute 3. Add the shrimps and fry for 2 - 3 minutes. Season with salt & pepper. Remove and keep aside. 4. Add 1 tablespoon of butter and fry the cherry tomatoes 5. Squeeze the juice of one lemon to the and add the shrimps. Fry for 1 minute. 6. Toss the zucchini noodles with the shrimps and cherry tomatoes for 1 more minute. 7. Remove from heat. 8.
