A strawberry salad with prosciutto, topped with soft brie cheese, drizzled with strawberry and orange dressing. The ideal salad for a summers day.
I eat strawberries on a daily basis. Every morning in a smoothie and it is one of my favourite toppings over my oatmeal. Super delicious and very healthy too. Packed with Vitamin C and antioxidants. It’s such a versatile fruit that can be used in many ways. It is definitely worth having in the freezer.
The only problem with strawberries is that they retain water easily which makes them go soft and moldy quickly. Chuck the ones with mold immediately as mold spreads fast. Store them in the fridge in a bowl layered with paper towel. That way they will stay good for a few more days.
Would you like to save the strawberries for later? Give them a rinse. Hull the berries by removing the green stem and leaves. Lay it out on a tray and pop it in the freezer. Remove once frozen and place it in a zip lock bag and pop it back in the freezer. They can be stored for about 12 months. Remember to write the date on the bag.

Enjoy this strawberry salad with prosciutto as a starter or on it’s own. Adjust the sweetness of the dressing according to your taste with honey. For a more thicker dressing, start off with a little orange juice. Work your way up from there until you have the desired consistency.
