My grandfather was a fisherman and so I grew up with fresh fish and seafood. I can easily give up all meats and just live off fish and seafood, especially salmon. If you love sashimi or poke bowl, you will like salmon tartare. It is also similar to steak tartare but then made from raw fish and sometimes serves with toast.

There are many variations to salmon tartare. No matter how you decide to make it, it is always best to use fresh, good quality salmon. The fish is then seasoned and shape in a circle with a baking ring. Baking rings comes in various sizes. The size to use will depend on the course you are serving.

Salmon tartare is a great dish to decorate. There are many options depending on the ingredients that you are using. Here, I have opted to use Pickled Radish, parmesan cheese cracker, chives and lemon zest. The spicy pickled radish adds a punch of spice to this dish.

How to make Parmesan Cheese Crackers?

  1. Preheat the oven on 160 degrees C.
  2. On a baking tray, sprinkle a thin layer with parmesan cheese into a baking ring to form circles.
  3. Bake in the oven for 10minutes or until the cheese has melted.
  4. Remove from the oven. While still hot, lift it with an egg lifter.
  5. Place it over a rolling pin to cool and form a curved shape.

Serve this salmon tartare with pickles as a starter or appetiser, as brunch or as lunch on toast. Your guest will love it.

Salmon Tartare Toast

Ingredients

  • 400g salmon, cut into blocks
  • 1 red onion, finely chopped
  • 10g chives, chopped finely
  • zest of one lemon
  • 15ml olive oil
  • 15ml sesame oil
  • 6 parmesan cheese crackers
  • chopped chives to garnish
  • pickled radish to decorate

Instructions

1. In a bowl, mix salmon, onion, half of the zest of the lemon and chives.

2. Add olive and sesame oil and mix well.

3. Fill a baking ring with the salmon mixture until packed tightly.

4. Remove the ring and decorate with parmesan cheese cracker and radish.

5. Sprinkle with remaining lemon zest and chives.

For the dressing:

3 tablespoons mayonnaise

1 tablespoon olive oil

1 teaspoon paprika powder

Salt & pepper to season.

1. Whisk all the ingredients together until well blended.
